Yeah, I thought so. Which is why I pulled together this Slow Cooker Indian Curried Cauliflower Soup. Any recipe so bold, it holds up to an 8-word title? It should be in your life, now.

Cauliflower in crock pot, then…
Toss together this spicy streusel for the top of your soup. Just simmer everything real quick in a skillet…
Then toss the streusel onto a sheet of parchment or foil and let it cool.
Once your cauliflower is tender, dump it into a blender with those few other ingredients (coconut milk, yogurt, curry, salt, um….like, literally. That’s it.)
Then spoon, streusel, and try to keep yourself from diving face-first into the bowls of utter goodness.
