Hey look at this – it’s a salmon pancake!
Actually they’re Salmon Croquettes, for the fancy-talk folk. But that’s just an all-nice-and-tied-up-in-a-pretty-little-bow term for what’s really going on here: Salmon. Pancakes. Also known as Pan-Fried Patty Magic, Seafood Scrumptiousness and Brinner 4.0… or whatever name you want to give them.
In any case, they’re easy to make and unbelievably tasty. All you need are a few staple ingredients, about 15 minutes of your time and a raging appetite for a yummy meal. Are we all set?
Good. Let’s go to there!
First, mix together the salmon patty ingredients. We’ve got some Old Bay seasoning, green onions, Dijon mustard and pink salmon going on up in here, amongst other goodies.
Add the light and flaky panko breadcrumbs, which help hold everything together.
Shape the mixture into your patties. AKA croquettes. AKA pancakes. AKA let’s move on so we can get eating!
Fry the patties in a lightly oiled cast-iron skillet until they’re browned on both sides and cooked through.
Transfer the croquettes to a plate and gaze at the beauty before you…
OK, now snap out of it and make the lemon-caper sauce to go on top! It’s sooooo good I can’t even deal.
Spoon a dollop or 25 on top and serve. This is living!
