I love dessert. More than anything in this world.
I consider myself to be a connoisseur when it comes to all things cake and frosting, and I love to bake cakes just as much as I love to eat them. But sometimes I just don’t have the time to start from scratch or be bothered with a frosting.
Enter poke cake!
It’s a simple cake made fancy-like when a brown sugar syrup is poured all over it to soak in even more flavor. And 30 minutes later, you have dessert that is simple, yet worth serving at the even the most elegant of affairs.
While gingerbread poke cake is heavenly all on its own, I cannot leave well enough alone! I add whipped cream or ice cream because, well, why not? I also like to grate some fresh nutmeg over the top for a little extra spice.
Gather your ingredients. It will probably take longer to do this than anything else. That is how easy this cake is to make.
Add the cake mix, eggs, oil, and water to a large bowl. Mix well.
Pour into a 9×13 pan that has been sprayed with cooking spray. Bake for 20 to 25 minutes or until a toothpick comes out clean.
Place the brown sugar, butter, and water in a saucepan.
Cook over medium heat until everything is melted.
Poke the cake with a toothpick or a fork. Go to town on the holes, we want the syrup to get all throughout this cake.
Pour the syrup over the cake, making sure to get it all over.
Let the cake cool completely before serving.
Serve with whipped cream or ice cream and grate fresh nutmeg over the top. Happy Holidays!
