These days it feels like my life revolves around tacos and burritos.
I’ve been working hard to help open a burrito shop, and as you can imagine, burritos somehow seep into every aspect of my waking life. And when I’m not awake, I even dream about them!
This recipe came from me taking home lots of leftovers night after night, and finally getting sick of eating just burritos over and over again.
I had some Vietnamese rice paper in the pantry, so I decided to put my burrito ingredients into a fresh summer roll.
No summer roll is complete without a dipping sauce. For this variety, all I did was blend up a salsa in the food processor.
Try this simple Burrito Summer Roll recipe next time you have some leftover pulled pork. It’s a perfect app for this time of the year because it’s served cold and there’s no cooking involved!
Just pour the salsa into a food processor with a couple of the beans to make a nicely textured sauce.
You could use this sauce for a variety of things. Serve to people who like salsa with no chunks, pour over a steak, or mix with vodka for a weird Bloody Mary.
If you’ve never used rice paper, you are in for a treat! They are super tasty and easy to use.
Just dip in water for about a second, fill with ingredients, and roll. It might seem like you should leave it in the water longer because it is still somewhat hard. Don’t cave to your instincts! Take it out of the water and add your ingredients; it will continue to soften over time.
Fill and roll. Just like rolling a burrito! Which I do every day.
These had a nice mix of burrito and summer roll flavor! If you make these at your next BBQ I guarantee they’ll be a huge hit. If they aren’t, you know where to find me.
