The best way to describe the flavor of this oh-so-amazing monkey bread is that it tastes like a burst of sunshine in your mouth. It’s bright, citrusy and you can’t help but smile when you take a bite. For fans of lemon, citrus, sugar, or anything that is sweet and tasty and good in this world, this bread is for you.

Here’s how to make it:

Ingredients for Lemon Monkey Bread

Gather your ingredients. We’ve got some Pillsbury Grands refrigerated biscuits (NOM NOM NOM), fresh lemons, buttah and a full cup o’ sugar. Oh yeah. This is a “go big or go home” kind of bread.

Pouring melted butter over biscuit pieces

Melt that buttah and pour it over the cut-up biscuit pieces. Go ahead and drool; you know you want to.

Adding lemon zest

Toss the biscuits with the butter, sugar and lemon zest…

And place it all in a greased bundt pan.

Bake until a nice golden brown

Bake the bread until it’s a nice deep golden brown on top and fully baked through so no doughiness remains.

Invert onto plate, after it cools down

Let the bread cool slightly, and then invert it carefully onto a plate. Listen to the choir of angels sing in the background as you reveal your magnificent creation.

I learned how to teach and make both sweet and savory monkey bread, for teaching Cub Scout Summer Camp. I had a talented Boy Scout who served me as an assistant for all our sessions. He had never experienced creating monkey bread before that camp session. After making the first loaf of the monkey bread, he chose to teach the Cubs and they were thrilled to work with him. We used the inexpensive 4 cans in a packet to create 2 whole loaves. The savory loaf – we melted a stick of margarine over the charcoal grill in a used and recycled pie pan. We sprinkled 1/4 – 1/2 c. of dry, grated cheese to sprinkle over pasta. We mixed 1/2 – 1 full tsp. of Italian herbs to the cheese. It was mixed with a spoon, to work it into the cheese. The boys each cut a biscuit into 4 pieces. They had disposable gloves, each cut piece was rolled into a small ball. They dipped the balls into the melted margarine, shook off any excess, then rolled into the seasoned cheese. A 14″ square of aluminum foil was rolled into a ball to put into the center of the pie pan. As they piled the pieces onto each other in the pan, they gave the raw dough loaf to the Boy Scout to put into their cardboard box oven. They also made a sweet second loaf – they dipped the balls into 1 cup of granulated sugar, that they had added 1 – 2 tsp. of powdered cinnamon to & mixed well. They built their loaf again. just as they had created the first one. They sat in circles, watching the Boy Scout teach them how to build the oven, and how to use one! They were so proud at learning the new information, and proud to have been given a set of instructions to take home to share with their families. At our Friday evening family picnic, the boys parents let us know how happy they were to learn so much that the boys could feel good about bringing it home to share with their families and neighbors, too!
