I am not much of a camper, but if you promised me that there would be campfire cones, I would make it happen.

Anything for a fun dessert, right? I think the key to successful camping is to have things to eat that are easy, travel well, and super fun. And lots of beer, but maybe that’s just me…

S’mores are great, but campfire cones are better. How come? Because you can make them any which way that you like them. Stuff an ice cream cone full of fruit, chocolate, nuts, marshmallows, what ever you like. Give them a toast on the grill and top them with a little scoop of whipped cream. Heaven in cone shape. The best part? You can have everything ready to go before you leave home.

Ingredients for Campfire Cones

Start by grabbing some bags of frozen fruit from Cascadian Farms. I used peach and raspberry, but this works with any fruit that you choose. Blueberries are also really good.

Ingredients for peach sauce

To make my peach sauce, put the peaches in a saucepan with water, sugar, cornstarch, nutmeg, cinnamon, and salt.

Finishing peach sauce

Bring the mixture to a boil, remove from heat. Add almond extract. That’s it. Totally easy, right? Do the same with the raspberries and you are in business.

Ingredients for Campfire Cones, ready for transport

Before you leave home, put your toppings in jars with a screw lid. I had sliced almonds, chocolate chips, crushed chocolate cookies, marshmallows, Cascadian Farms granola, and lots of whipped cream.

Campfire cones, before heat

Grab a cone, stuff it with whatever toppings you like.

Campfire Cones on grill

Wrap the cones in some tin toil and put them on the grill for just a minute or two.

Ready for whipped cream

Add some whipped cream.

Campfire cone with bite out of it

And prepare for some very happy campers.

Thanks to Chef Jessica Bright for the awesome inspiration!

This is a simple recipe using the most simple ingredients, to achieve a warm, fruity, delicious treat. After heating the fruit in the ice cream cones, allow them to cool briefly, then serve with cold whipped topping and any other topping to add at that point!
