Are you at a stage in your life where you feel the need to be fancy?

Not like fancy to the point where you say things like “fancy pantsy” because I’m pretty sure we can all agree that’s rightly uncomfortable. UNLESS you say it like “faincy paintsy” and you dance around in a circle like a rooster. In that case you’re awesome.

Mother’s Day is like 20 seconds from now and even if she doesn’t say it out loud, your mom wants to feel a little fancy. She does. This is how to make that happen, kittens. Three words.

1) Endive. See, you’re already standing taller.

2) Lox. Yep, probably threw an accent in there.

3) Herbed Goat Cheese. DID YOU JUST PUT ON FALSE EYELASHES?

I did too.

15 minutes from start to finish on these FAINCY PAINTSY appies, and you’ll be dancing like a rooster with your mom in no time. Just get it on video, fo’ da love.

Take an endive head, slice the bottom core off, and separate 8 leaves. Grab some lox (or smoked salmon, but don’t ask me to explain the difference to you, because I Wikipedia’d it and got a headache), some fresh herbs (whatever you have!) and some softened goat cheese.Ingredients for Endive Boats with Herbed Goat Cheese and Lox

Give those herbs a goooood chop. I used what I had in the garden. Basil, thyme, oregano. But really, you can use anything.

Layer the lox slices in each endive boat.

Take some goat cheese and roll it up into a little ball with your hand, and then roll it around in the chopped herbs until it’s all coated up FAINCY PAINTSY like.

Look what you have!

And then you simply put a goat cheese ball at the tip of each boat. I squeezed some fresh lemon juice over the whole thing, but it’s totes optional.

Serve this to your mama and watch her be all, “hoooooneeeey, you didn’t have toooooo!”
