I’m going to need to see a show of hands here today. When was the last time you ate chicken nuggets?

Oh no, have I brought up horrific memories from the dark corners of your mind? Visions of soggy chunks of mystery meat dripping with high fructose corn syrup and dredged through dirt?

I know. You know what, just cry it out.

There ya go.

Why don’t we revisit this classic childhood favorite, but keep it totes waistline friendly and fiberlicious. Cool? Cool.

With that in mind, I grabbed a good handful of Cascadian Farm Organic Hearty Morning fiber cereal, blitzed it up nice and fine with some of my favorite spices, baked the tar out of the nuggets and kind of freaked out on them.

I’m just glad there wasn’t a hidden camera.

Two words: MAKE THESE.

Here’s the skinny on how:

Measure out 2 cups of cereal.

Blitz ‘em up and you get this awesome coating.

Breading for Skinny Chicken Nuggets

Pour into a shallow bowl and dredge your chicken nugget pieces through it, like so:

Arrange on a baking sheet.

Out of the oven

After some glorious baking, you end up with healthy nuggets with a hint of sweet and spice. Dunk in your favorite dip and you’re SET.

And to be honest, I have no tricks! I think it’s the cereal color and just baking it for about 10 minutes. It worked!

Sure! You could go with General Mills’ Fiber One cereal. It would have the same nutritional benefits and it’s REALLY good. Thanks for asking!

Where I live, our organic sections are very small and ill-maintained. What other cereals could be substituted for Cascadian Farms? Thanks ^.^
