Camping in the summer is one of my all-time favorite things to do with family and friends.

I love exploring new trails, taking a dip in the lake and roasting marshmallows over a campfire at night while telling stories. Of course, I especially love “camping” food, like hot dogs, hamburgers and the quintessential dessert, s’mores. I rarely go a trip without them.

Sometimes it’s nice to mix things up a bit. I do love me some traditional s’mores, with a warm, golden brown marshmallow melted between a chunk of chocolate and two sweet graham crackers.

But it can get a little cumbersome assembling them in the dark (we’ve had many perfectly roasted marshmallows meet their demise by falling to the ground or into the fire pit). Plus, unless you’ve got a good fire going, there’s really no other way to make them. Or so I thought.

These S’mores Cookies are perfect for when you don’t have a campfire handy but really want the taste of a s’more. They’re a great on-the-go version of the popular treat for when you want to hit the trail, but need a snack to keep you fueled.

Plus, they’re really easy to make – just bake, cool, pack up and bring them along for the weekend. No more juggling bags of marshmallows, chocolate and graham crackers that might crumble along the way.

I make my cookies with Nature Valley Oats n’ Honey granola bars – something about the sweet taste and mildly crunchy texture makes the cookie base taste a lot like graham crackers but with extra flavor. Top these babies with halved marshmallows, “roast” them in the oven and drizzle melted chocolate on top, and you’ve got yourself a s’more – cookie, that is.

I make mine with crushed graham crackers (fine like a powder) using a regular chocolate chip cookie recipe. Just add one cup of the graham cracker crumb and half the amt of chocolate chips. When they are almost done a break up a few hershey bars and place the chunks on top w/ a few mini marshmallows. They are indulgent and super delish.

Like the recipe concept, but looks like they need more chocolate! Really want to make these and will add chocolate to the cookies.

I just finished a batch of these. I replaced the granola with graham cracker crumbs. They turned out great (if a little crumbly), though next time I would probably make them small enough that the marshmallow covers most of the cookie and try to integrate the chocolate better (maybe use chocolate squares under the marshmallow before broiling?).
