People who know me know I love, love, love coffee.

As ridiculous as it sounds, it’s true – I haven’t gone a day without coffee since I was 15 years old. That’s nearly 10 years of nonstop coffee-drinking. Whether or not I’m proud of that fact is a different story, but the point is – I really love coffee. It not only wakes me up every morning and keeps me sustained throughout the day, but I just love the taste.

But despite my affection for coffee, sometimes, just a plain ol’ cup of coffee doesn’t cut it. Sometimes, I want an iced coffee with milk. Sometimes, I want a caramel latte, or a mocha, or a nonfat, dry, double cappuccino. And sometimes, I want my coffee in popsicle form, with hints of cinnamon and almond flavors.

On the days that I’m craving the latter, these Mexican Coffee Popsicles hit the spot. The sweetness of the ground cinnamon and almond extract contrasts well with the strong, bitter taste of espresso. On a warm summer day when the last thing I want is a steaming hot cup of coffee in my face, these popsicles are a perfect substitute!

Of course, unless you eat about 16 of these in one sitting, you’re not getting much of a jolt, but they do still provide enough energy and taste to suffice in a pinch (or when you just really want a popsicle). They remind me a lot of one of my favorite ice cream flavors – you guessed it, coffee. If you’re really craving coffee ice cream but don’t want to go to the store, make these popsicles instead!
