This could possibly be the most difficult bread I’ve ever had to make.

But it’s also the most rewarding!

You see, making Panda Bread isn’t easy, especially when you’re trying to make a face inside a bread (not something I do every day!). However, the hard work is so worth it when you slice open the sandwich loaf, peek inside and see a fun panda staring back at you. Who doesn’t love that?

To start off right with this bread, I suggest using unbleached all-purpose flour, as opposed to bread flour, because you’ll be working the bread a lot and don’t want the gluten to toughen. Gold Medal’s unbleached all-purpose flour is definitely up to the challenge.

Admittedly, I ran into some roadblocks while making this bread. The biggest one was deciding how to make the green dough. Though matcha, or green tea powder, works well and delivers a unique flavor, it’s also crazy expensive. If you’re not willing to drop some serious change on the stuff, green food coloring will also do the trick.

Another roadblock was, of course, making the panda face. These photos, combined with recipe directions, give step-by-step instructions on how to construct the face. As you can see, mine still didn’t turn out perfectly, but it was pretty darn close! Plus, I think it adds character.

Don’t get me wrong – despite the challenges, this was an incredibly fun, unique bread to make. And the flavor – a light, enriched white sandwich bread – was delightful. Though it was a little weird eating a panda’s face.

This recipe would be the perfect thing to make with kids or for a zoo-themed party, or even for fun sandwiches. Heck, once you make this bread, you can make multi-“face”ted breads (ahem, pardon the pun). Or you can make it just to impress your peeps. That’s as good a reason as any!

Correct me if I’m wrong, but I think there is something very off about your ingredients (coming from an experienced bread baker and also some of the reviews stating bad bread) first the salt amount is way too much, second, you shouldn’t ever microwave an egg used in baking to warm it, it should be done on stove top to keep it from heating unevenly and cooking. Third, the cocoa was way too much to achieve a brown colour, I added it slowly to get a brown dough. Any type of food colouring and cocoa will darken during the baking process and also alkalizes the dough, affecting the rise and can cause off flavours if there is too much of them added. It’s better to go easy on the colouring to prevent the funky weird coloring taste, I recommend getting colour gels used for fondants/icings instead of regular food colour.

My only issue (though I’ve not yet made the bread) is, It doesn’t have a nose. Panda’s have noses.

I was having problems with the coloring.

Instead of green tea i substituted some cinnamon with red food coloring.

But my problem is that we don’t have a bread mixer or anything so I just missed it with a regular mixer for a bit then by hand.

but getting the color to mix that way was very hard. I was thinking of making three separate doughs at the beginning but how would i split the ingredients then.


Has anyone else come up with an easy way to mix in the color/flavoring?

I don’t find that heating the egg and milk for 30 sec to be a good idea. Is it just me or isn’t that too long? You could always just leave it out at room temp. I believe the reason for warm milk is for the yeast, but you don’t need that if you’re using instant active dry yeast. Or I could be wrong…

I would recommend using Prairie Gold flour. It’s unbleached APF and it’s great for making bread. Prairie Gold uses a hard red and white spring wheat. Not sure what GM uses other than a spring wheat, but believe me I’ve experimented with lots of flour and Prairie Gold has the best texture and taste.


I shall try this recipe though, I love making bread!

I was wondering what kind or brand of Matcha green tea did you use, or did you use food color? If you did use Matcha, was it pure or was there added sugar?

if the temperature of the water is more than 110dF, it will kill the yeast.

we made this bread this past weekend. it is indeed a hard bread lol but fun at the same time. big tip to anyone else who is planning on trying it, cut the salt at least in half. far too salty.

Made this bread for the kid’s at daycare and they seemed excited to try it. The face came out perfectly. I put the middle doughs on first then put the eyes on and did the same with the green dough and ears, it turned out better than the pictured on (no offense) so maybe if you decide to make it do it that way instead of putting on the eyes and ears first.

I ended up having to add water when I added the coloring/cocoa because the dough was quite tough. That said, I appreciate the post/idea! I hope it comes out well; I’ll post a pic when it’s finished! I have a kid I work with who had celieac disease…I use rice flour instead of regular flour in all my baking and it seems to work the same (usually). Go ahead and try it! I can buy the flour at my local grocery store!

Oops, my bad! I prefer unbleached dough to bleached, but I accidentally bought the bleached version when I made the recipe. It doesn’t affect the bread either way whether you use bleached or unbleached. Good eye!
